Coffee Competitions Finland (CCF) held its annual AEROPRESS CHAMPIONSHIP in Lahti on 8.8, where competitors brewed a mystery coffee using their own self-developed recipes to determine who could extract it best.
This year, the competition coffee was roasted by our skilled hands, and it's now available to order from us. Only a limited batch is available, roasted on 21.7.2026. This year's championship title went to Joonas Markkanen — congratulations to the winner! Below you'll find the winning Aeropress recipe for this coffee.
Jovemcafe
The competition coffee is a washed Guatemalan coffee.
Jovemcafe is a group led by indigenous Popti women from the village of Com, near San Antonio Huista. The group was founded in 2017 to handle joint marketing as well as savings and microcredit services, with the goal of becoming a formal cooperative in the future.
This lot consists of coffee from two producers, Narcisa Salucio and Paula Perez. Both process their harvests at small home wet mills together with their families. Com's high elevation and cool climate allow for a long fermentation of up to 58 hours. Thanks to Paula's own experimentation, the whole group has moved to using longer fermentation times. After washing, the coffee is soaked a second time in clean water, then dried on the patio.
Primavera and The Chain Collaborative support Jovemcafe through a development project that includes a henhouse for additional income and a nursery for forest and fruit trees.
Winner's Aeropress recipe
Preparation
Position: Inverted
Dose: 19 g
Grind: Comandante C40 MK3 - 23 clicks
Filter: 1 standard paper filter, rinsed
Water: Leenharju water cooperative + 15 ppm Na and 15 ppm K
Method
1. Preheat water to 60°C
2. Pour 70 g of 60°C bypass water into the carafe
3. Heat the remaining water to 85°C
4. Grind the coffee and dump it into the inverted brewer
5. Start the timer. Pour 115 g of 85°C water in a spiral motion.
6. Stir for 5 sec.
7. At 1:15, stir again for 5 sec.
8. Put the cap on the brewer.
9. At 1:30, flip the brewer onto the carafe and press gently for 15 sec
10. Swirl the carafe to mix the bypass water with the coffee.
11. Pour into a cup and enjoy!
