This coffee helped us to secure victory in the 'Nordics Best Roaster' -competition during the spring of 2024 at the Nordic Coffee Festival.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAt the end of 2025, Lauri and Aleksi traveled to Colombia. We did not manage to reach his plantations on that trip, but Dario came to meet us in the town of Gigante. We got to know the gentleman behind the coffee, and we agreed that on our next trip we would visit him so that we can see the El Recreo farm and meet his wife, Ines Maria, who also works on the farm.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eDario comes from a family of coffee farmers and inherited the El Recreo farm from his parents. He has been working in\u0026nbsp;coffee since 1975, starting as a helper on the farm under his parents\u0026nbsp;guidance. Seven years ago, Dario decided to focus on specialty coffee as a way to improve his family’s quality of life. Thanks to his parents' knowledge and his own studies, he had a strong foundation to begin enhancing the quality of the coffee produced on his farm. This dedication is evident in his coffees, which are clean, complex, and flavorful.\u003c\/p\u003e\n\u003cp\u003eFinca El Recreo is located in the Huila region, in the municipality of Gigante, at an altitude of 1,670 meters. Of the farm’s 16 hectares, 10 are dedicated to coffee cultivation. Alongside Pink Bourbon, Dario also grows Caturra, Colombia, and Castillo varieties. It is a washed coffee, but with a longer-than-usual fermentation. In the cup you’ll find complex tropical fruit, a lingonberry-like acidity, and floral notes. Bright and lively, yet balanced by a syrupy sweetness. Truly a coffee with character.\u003c\/p\u003e\n\u003cp data-start=\"374\" data-end=\"1113\"\u003eJhon Jairo is a producer whose coffee quality has been exceptional for a long time, but that didn’t used to be reflected in the price he received. In San Agustín it has been common to sell coffee “en verde” (wet): depulped but still wet, sold onward through the local market. With today’s production costs, this can mean significantly lower income and even unprofitable farming, even when quality is high. That changed in 2019, when Semilla Coffee (our green coffee partner) bought a 70 kg bag from him and recognized the high quality he was producing. Since then, Jhon has built his own processing setup at San Rafael: a motorized depulper and a solar dryer, and he continues to develop his farm long-term, including planting new varieties.\u003c\/p\u003e\n\u003cp data-start=\"1115\" data-end=\"1672\"\u003eProcessing at the farm works like this: cherries are harvested roughly every three weeks, fermented for 24 hours in sealed bags, depulped the next day, and then dry-fermented for a further 36 hours in tiled tanks. The cool climate makes Tabi slow to mature and keeps volumes small, but it also elevates cup clarity and overall quality. The project is supported by Semilla and is led locally by Esnaider Ortega-Gómez and Didier Ortega. Monkaaba has also become a key part of Jhon’s everyday life: he has built a strong customer base for his coffees and found a supportive community through the project.
